A modern flavor on a traditional cookie, Hamentaschen. Traditionally served during the celebration of Purim, this chocolate combo is so insanely good, it should be served year round by everyone. A chocolate cookie dough that comes together in a second in the food processor, then filled with white chocolate chips and a dollop of Nutella. A drizzle of white chocolate on the baked cookie and you’re officially in cookie heaven

Recipe:

  • 7 tablespoons/100g unsalted butter, cut into cubes

  • 1 cup + 2 tablespoons all-purpose flour

  • 1/4 cup/30g cocoa powder

  • 1/2 cup + 2 tablespoons powdered sugar/icing sugar

  • Pinch of salt

  • 1 egg yolk

  • 1 tablespoon water

  • White chocolate chips

  • Nutella

Place the dough ingredients in a food processor and process until the dough comes together in a ball. Place the dough between 2 sheets of parchment paper and roll out to a thickness of 1/8th/2.5mm thickness. Refrigerate dough for 10 minutes if it becomes too soft. Using a 3-inch cookie cutter, cut out rounds of cookie dough and place on a parchment lined cookie sheet.

Place some white chocolate chips in the center of each cookie. Top with a dollop of Nutella- use a piping bag or a spoon. (Microwave the Nutella for 30 seconds to get a soft consistency).
Pull up 3 sides of the cookie to form a triangle shape. Bake the cookies at 350°F/180°C for 14 minutes.

Drizzle the cooled cookies with melted white chocolate ( stir a 1/2 teaspoon of coconut oil into the melted white chocolate so that it hardens on the cookie.) The recipe doubles easily if need be.
