My take on Sivan's Kitchen's sheet pan boureka.

Flaky layers, spinach and multiple cheeses with that pull-apart moment everyone fights over.

Perfect for Super Bowl grazing, or honestly the whole reason to watch....


Recipe:

2 sheets puff pastry, defrosted

1 cup cottage cheese (tip: drain it well and pat dry)

1 cup sour cream

1 cup crumbled feta cheese,

1 cup shredded mozzarella

A tew slices of any sliced cheese, torn 2 cups baby spinach, chopped

2 eggs, beaten

Salt and black pepper to taste.

One egg, beaten for egg wash.

Toppings: Sesame seeds, Everything-but-the-bagel seasoning, JF Spicy Salt (or red pepper flakes), za'atar


Preheat the oven to 375°F/190°C.

Lay one sheet of puff pastry on a parchment-lined sheet pan.

In a mixing bowl, mix together the cheeses, spinach and beaten eggs. Season to taste and spread over the pastry. Top with the second sheet of puff pastry and brush with a beaten eggs.

Score the pastry diagonally with a sharp knife in both directions.

Sprinkle with toppings of your choice and bake for

45 -50 minutes. (Longer if the center isn't set).

Remove from the oven and cool for 10 minutes.

Cut all the way through for easy serving.
