Recipe:
5 eggs, boiled for exactly 3 minutes
2 cups all-purpose flour
1/3 cup cold unsalted butter, cubed
1/2 tsp salt
1/4 tsp black pepper
11/2 tsp baking powder
1/2 tsp baking soda
1/4 cup chopped chives
1/4 cup grated Parmesan cheese
4 slices cooked bacon, chopped
1 cup buttermilk
1/2 cup Half & Half
Additional cheese for topping.
Steps:
Place a small scoop of the muffin batter in a muffin pan, top with the boiled egg. Place another scoop of batter on top of the egg, making sure the egg is fully enclosed with batter.
Sprinkle muffins with additional cheese.
Bake at 400°F for 16-18 minutes, depending on how firm you like your yolks.
Tip – use a silicone muffin pan for extra large muffins.
