Taco Tuesday doesn’t get any easier than this. A quick and versatile dinner that comes together in one pan. Use any ground meat or vegetarian option you prefer and serve tortillas or chips and your favorite taco toppings.

Recipe:

  • 1 tablespoon olive oil

  • 1/2 onion, finely diced

  • 1 pound ground beef, chicken , turkey or vegetarian crumbles

  • 1/2 cup uncooked rice (minute-rice if you really want to make this quick)

  • 3 tablespoons tomato paste

  • 2 cups broth – chicken or vegetable

  • 1 packet taco seasoning

  • 1/2 cup shredded Mexican-blend

  • cheese

  • Chopped cilantro

Serve with shredded lettuce, tomato salsa, avocado, shredded Mexican blend cheese and limes.

Heat the oil in a skillet and cook the onion until softened. Add the ground meat, breaking it up with a spoon and cook until browned. Drain excess fat if necessary. Stir in the tomato paste and broth. Add the rice and taco seasoning. Cover and cook the mixture according to the rice instructions. Uncover and stir in the cheese. Sprinkle with chopped cilantro and serve.
