Super Summer Salsa
This salsa incorporates all of the best summer ingredients...scoop with chips or top it on tacos!
All the best of summer ingredients come together in this stunning salsa that you will want to eat with everything. Dollop it on your tacos - I’m partial to shrimp tacos with this one. Serve it on grilled chicken , steak or salmon or simply with a side of tortilla chips. Crunch, creamy and a little bit of everything in each bite. What’s not to love…
Recipe:
1 large heirloom tomato, seeded and finely chopped
1/2 medium red onion, finely chopped and soaked in cold water for 10 minutes
1 ear of corn, shucked (cooking the corn is optional)
2 avocados, finely chopped
Finely diced Jalapeño - I use a combination of red and green
1 clove garlic, grated
1/2 cup chopped cilantro
1/4 cup fresh lime juice
1/2 tsp ground cumin
Salt and black pepper to taste
Recipe can be halved for a smaller quantity. Enjoy!
