A stunning presentation for everyone’s favorite savory pastry. Except, taken up a notch with Halloumi cheese instead of the usual feta. Another winner in the ‘Looks fancy but so easy to make’ series.
Recipe:
1 sheet of puff pastry
150g frozen spinach, defrosted and the moisture wrung out
100g grated Halloumi cheese
100g grated mozzarella cheese
1 bunch scallions, chopped
2 tablespoons chopped dill
Salt & black pepper to taste (I use JF Universal Salt)
1 egg white
1 egg yolk for brushing on the pastry
Sesame seeds for decoration
Preheat oven to 400°F/200°F.
In a mixing bowl combine all the ingredients for the filling.
Cut the pastry sheet in half vertically, as shown and set aside one half. Place the spinach on the half and spread evenly. Top with the other half pastry sheet and cut down the center lengthways. Then cut across to form 6 or 8 squares depending on the length of your pastry sheet.
Turn the squares and lay in a diamond shape in 2 rows.
Brush the tops with egg wash, sprinkle with sesame seeds and bake for 15 -20 minutes until golden brown.
