A great way to use up leftover vegetables with a surprise ingredient that magically creates 3 layers. Add protein if you wish but don’t forget to allow 30 minutes for cooling before you dig in. Leftovers make a delicious addition to a packed lunch.

Recipe:

  • 4 eggs, whisked

  • 375ml (1 1/2 cups) milk

  • 50g butter, melted

  • 180g (1 cup) original (plain) pancake mix

  • 1 zucchini, grilled and chopped

  • 1/2 cup cooked spinach, chopped

  • 70g (2/3 cup) coarsely grated cheddar

  • 2 green onion, sliced

  1. Whisk eggs, milk, butter and pancake mix together

  2. Pour into a buttered pie dish

  3. Top with vegetables, then cheese

  4. Bake in a 6 cup pie dish at 180°/200°C for 40-45 minutes

  5. Cool for 30 minutes before slicing
