A great way to use up leftover vegetables with a surprise ingredient that magically creates 3 layers. Add protein if you wish but don’t forget to allow 30 minutes for cooling before you dig in. Leftovers make a delicious addition to a packed lunch.
Recipe:
4 eggs, whisked
375ml (1 1/2 cups) milk
50g butter, melted
180g (1 cup) original (plain) pancake mix
1 zucchini, grilled and chopped
1/2 cup cooked spinach, chopped
70g (2/3 cup) coarsely grated cheddar
2 green onion, sliced
Whisk eggs, milk, butter and pancake mix together
Pour into a buttered pie dish
Top with vegetables, then cheese
Bake in a 6 cup pie dish at 180°/200°C for 40-45 minutes
Cool for 30 minutes before slicing
