An amped up, hearty high protein salad with a honey lemon vinaigrette that marinates the salad and keeps it delicious and tasty (never soggy) for days. Add chopped chicken, turkey or tuna and portion into your favorite lunch containers. If you can’t eat salad without lettuce, add it fresh each day.
Recipe:
8oz/ 225g Haricot vert beans, steamed
1 15.5oz/439g can garbanzo beans, drained and rinsed
1 cup green olives, pitted and sliced
8oz/227g feta cheese cut into small cubes OR mini mozzarella balls
1 small fennel bulb, shaved thinly with a mandoline
1 bunch Italian parsley OR dill, finely chopped
Optional: chopped chicken, deli slices of turkey, salami or tuna
Vinaigrette:
1/2 cup olive oil
1/4 cup red wine vinegar
Juice of one lemon
1-2 tablespoons honey
2 teaspoons Dijon mustard
1 small shallot, chopped
Pinch of red pepper flakes
Sea salt and black pepper to taste
