Your new go-to recipe for spring picnics and summer lunches— Refreshing orzo pasta salad with snap peas, radishes, and feta cheese—tossed in a homemade lemon Parmesan dressing and topped with fresh dill and mint. 🥗🌱☀️

Recipe:
1 cup sugar snap peas (trimmed and sliced on an angle)
8 medium radishes (trimmed and thinly sliced, with a mandoline if possible
1/2 cup feta cheese (crumbled)
1/4 cup fresh mint , chopped
1/4 cup fresh dill, chopped

Dressing:
1/4 cup olive oil
1 tablespoon lemon zest (from one medium lemon)
Juice from 1 lemon ( about 3 tablespoons)
1 teaspoon dijon mustard
1/2 teaspoon each salt & pepper

Boil orzo until al dente, per instructions the box. Make the dressing.
Drain the orzo and toss with a little of the dressing while warm.
Top with snap peas, radishes, feta and herbs.
Pour the dressing over the salad and toss.
Tip: dress the salad at least 30 minutes before serving so that the flavors meld.
