A one-bowl cake always catches my eye and this being one of the most popular recipes on Food52, I knew it has to be a winner. A delicious snacking cake with a delicate crumb made perfect by using ricotta cheese. It’s been voted favorite cake of all time by the fussiest eater in our house and is now on weekly rotation. I used oranges because it’s what I had but lemons, Meyer lemons or limes should all be equally fantastic.
Recipe for the cake:
3 tablespoons orange zest (from 2 oranges)
1 1/4 cups (247 grams) granulated sugar
1/2 cup (99 grams) vegetable oil
1 1/2 teaspoons vanilla extract
2 large eggs
1 large egg yolk
3 tablespoons freshly squeezed orange juice
1 1/4 cups (284 grams) full-fat ricotta cheese
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 cups (180 grams) cake flour (NOT all-purpose)
Bake at 350°F (180°C) for 40 – 45 minutes.
Recipe for the glaze:
1 cup (113 grams) confectioners’ sugar
1 tablespoon to 2 tablespoons freshly squeezed orange juice
PS- this makes a beautiful loaf cake too if you prefer.
