Recipe:
¾ to 1 cup sugar
½ cup unsalted butter, softened
1 cup unbleached flour, sifted
1 teaspoon baking powder
Pinch of salt
2 eggs
12 pitted purple plums, halved (or fruit of choice)
Preheat oven to 350°F/180°C
Cream the butter and sugar well in a stand mixer or using a hand held mixer. Mix in the eggs until well combined. Add the flour, baking powder and salt and beat well.
Pour the batter into a prepared 8” or 9” springform pan. Arrange the plums cut side down on top of the batter. Sprinkle with cinnamon sugar. Bake the cake for 1 hour. Serve with whipped cream or vanilla ice cream.
✨Tip: this cake freezes well. Place in 300°F/150°C oven to warm.
