Recipe:
Marinade:
2 cups plain full-fat greek yogurt
¼ cup lemon juice
¾ cup olive oil
1 tablespoon kosher salt
1 tablespoon minced garlic
1 tablespoon ground coriander
1 tablespoon paprika
1 tablespoon ground cumin
½ teaspoon cayenne pepper
1 teaspoon cinnamon
1 teaspoon freshly ground black pepper
2 lb/1 kg boneless, skinless chicken thighs, pounded flat
1 onion, peeled and halved
1 thin wooden skewer
Combine the marinade ingredients and place in a large ziplock bag. Add the chicken thighs and make sure they are fully covered in the marinade. Refrigerate for at least one hour and up to overnight.
Place the skewer vertically in the center of the onion and place on a baking sheet or cast iron pan. Remove the chicken from the marinade. Thread the chicken onto the skewer rotating each piece 90°.
Bake at 400°F/200°C for 1 1/2 to 2 hours, until chicken reaches an internal temperature of 165°F/75°C.
Cool for 15 minutes and slice.
Serve on pita bread with chopped tomatoes, thinly sliced onion and parsley. Top with homemade or store bought Tzatziki or red pepper Labneh.
