Recipe: Spinach Artichoke Salmon Parchment Boats

Serves 2

Ingredients

For the spinach artichoke base:

* 1 tbsp olive oil
* 2 cloves garlic, finely chopped
* 2 cups fresh spinach (or 1 cup frozen, squeezed dry)
* 1 cup artichoke hearts, chopped (jarred or canned, drained)
* 2 tbsp cream cheese
* 2 tbsp sour cream or Greek yogurt
* ¼ cup grated parmesan
* Zest of ½ lemon
* Salt + pepper

For the salmon:

* 2 salmon fillets (4–6 oz each)
* Olive oil, salt, pepper

For the mustard glaze:

* 2 tbsp Dijon mustard
* 1 tbsp whole grain mustard
* 1 tbsp maple syrup or honey
* 1 tsp lemon juice
* 1 tbsp olive oil
* Pinch salt

Bake at 400°F/200°C for 12 minutes (depending on the thickness of your salmon)
