Nicoise-style Tuna Salad Lettuce Cups 🍴
Fresh and flavorful! 🥬 These quick and easy Niçoise-style tuna salad cups on radicchio leaves make a light yet satisfying meal. Perfect for a healthy lunch on the go…

Recipe:

1 can good-quality tuna, preferably Portuguese or Spanish, drained
One -fourth of a roasted pepper, I used a yellow pepper
1/4 cup Kalamata olives, chopped
1 boiled egg, peeled
1/4 cup steamed green beans, sliced
A few cherry tomatoes, chopped (I didn’t have any)
Optional: 1 steamed small Yukon gold potato
Radicchio or Baby Gem lettuce leaves for serving.

Dressing:
2 tablespoons olive oil
1 tablespoon red or white wine vinegar
2 teaspoons Dijon mustard
A squeeze of lemon juice
Salt & Black pepper to taste ( I use JF Spicy Salt)
