A small bite of something decadently sweet is the perfect way to round off a heavy Thanksgiving meal. A mini muffin pan, store bought pastry and the easiest filling is all you need - a dollop is whipped cream is optional…
Recipe:
1 9” pastry crust - store bought is fine
1 egg
2/3 cup brown sugar
2/3 cup toasted pecan nuts, chopped
1 tablespoon butter, melted
Pinch of salt
1/2 teaspoon vanilla extract or paste
Cut pastry into 11/2” rounds with a cookie cutter. Place in the bottoms of a mini muffin pan (with removable bottom if possible).
Whisk together eggs, sugar and vanilla. Fold in pecans and salt.
Spoon the mixture into the muffin pan.
Bake at 350°F for 20 minutes. Cool and serve with a dollop of whipped cream on each bite.
