Cookies so good, everyone will be swooning!

Recipe:

  • 11/4 cups/150g all-purpose flour

  • 1 tsp cornstarch

  • Pinch of kosher salt

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 cup/ 60g unsalted butter (melted and cooled)

  • 1/2cup/90g brown sugar

  • 1/4 cup/ 50g white sugar

  • 1 tsp vanilla extract

  • Dash of almond extract

  • 1 egg

  • 1/2 cup/100g white chocolate chips

  • 1/2 cup/ 100g chopped macadamia nuts (toasted)

  • Flaky salt for sprinkling

Combine the flour, salt, baking powder, baking soda and both sugars in a mixing bowl. Whisk the melted butter, vanilla & almond extract and egg together and add to the flour/sugar mixture. Fold in the macadamias and white chocolate.
Refrigerate the mixture for 2 hours and up to 24 hours. (the longer the mixture is refrigerated the less the cookie will spread)

Scoop 11/2 tablespoonfuls (or more if want really large cookies), onto a baking sheet lined with parchment paper. Bake at 350°F/180°C for 10 – 12 minutes. Sprinkle with flaky salt while still warm.
