3/4 cup (135g)cooked quinoa
1/4 cup (25g) finely diced onion
2 tablespoons chopped parsley
2 tablespoons mayonnaise
Juice of half a lemon
1 cup (60g) Panko breadcrumbs
11/2 teaspoons salt
Freshly ground black pepper
2 eggs, beaten
Oil for frying
