A healthy and delicious salad to serve for lunch or dinner. Packed with flavor and keeps well in the fridge for a few days. Add your favorite protein and some chopped spinach if you need your greens.
Recipe:
Honey Ginger Dressing:
• 1/2 cup rice vinegar
• 1/2 cup olive oil
• 3 Tbsp. sesame oil
• 3 Tbsp. honey
• 2 Tbsp. soy sauce
• 2 tsps sriracha
• 2 Tbsp. grated fresh ginger
• 1 Tbsp, toasted sesame seeds, optional
• 2 cloves garlic, minced
• 1/2 tsp black pepper
• 1/4 tsp kosher salt
Ramen Noodle Salad:
• 2 3-oz. ramen packets, seasoning packet discarded
• 3 cups purple cabbage, thinly sliced (I use a mandoline)
• 2 cups shredded carrots (use ready-shredded to save time)
• 1 red bell pepper, diced
• 2 Persian cucumber, sliced & chopped
• 4 green onions, sliced
• Optional add-ons:
• 3/4 cup dry roasted peanuts, chopped or sliced almonds
• 2 cups chopped baby spinach or kale
• 2 tablespoons toasted sesame seeds
• Grilled chicken, grilled shrimp or salmon, cut into chunks
