Wholesome, nutritious and a little indulgent. So easy your kids could make them….
Recipe:
2 and 1/2 cups mixed nuts/seeds of choice - I use almond, peanuts, cashews, pistachios and pumpkin seeds.
1/2 cup crispy rice cereal
1/4 cup brown rice syrup, warmed slightly
2 teaspoons vanilla extract
1/2 teaspoon sea salt
Chocolate dip/drizzle:
6oz semisweet or milk chocolate, melted
2 teaspoons coconut oil
Directions:
Preheat oven to 325°F/160°C.
Combine nuts and seeds in a bowl.
Stir the vanilla extract into the brown rice syrup and pour over the nut mixture. Stir in the salt.
Fill the silicone molds with the nut mixture and bake for 18 minutes.
Cool the bars and dip the base into the melted chocolate. Drizzle the bar with more chocolate and additional sea salt.
Tip: brown rice is the essential ingredient here . Honey or maple syrup won’t work as well.
