Nectarines wrapped in prosciutto are little bundles of salty, sweet heaven. Combined with creamy Burrata on a bed of arugula, drizzled with balsamic glaze and you have the most delicious summer salad. Make more bundles than you think you need - they won’t all make it to the bowl…

Recipe:

2 nectarines, sliced into 8ths
8 slices prosciutto
3 cups arugula
2 avocados, cubed
1 ball Burrata cheese
Olive oil
Balsamic Glaze
Salt and black pepper
1 ball of fresh Buratta cheese

Preheat and oil grill pan. Wrap each nectarine wedge in prosciutto and cook over medium high heat for about 2 minutes per side.
In a salad bowl, add arugula and avocado. Top with pieces of Burrata cheese and season with salt and pepper. Drizzle with olive oil and balsamic glaze and serve.
