Grilled Nectarine, Prosciutto and Burrata Salad
This mouth watering salad combines nectarine, prosciutto and burrata and is the perfect way to transiton from summer to fall!
Nectarines wrapped in prosciutto are little bundles of salty, sweet heaven. Combined with creamy Burrata on a bed of arugula, drizzled with balsamic glaze and you have the most delicious summer salad. Make more bundles than you think you need - they won’t all make it to the bowl…
Recipe:
2 nectarines, sliced into 8ths
8 slices prosciutto
3 cups arugula
2 avocados, cubed
1 ball Burrata cheese
Olive oil
Balsamic Glaze
Salt and black pepper
1 ball of fresh Buratta cheese
Preheat and oil grill pan. Wrap each nectarine wedge in prosciutto and cook over medium high heat for about 2 minutes per side.
In a salad bowl, add arugula and avocado. Top with pieces of Burrata cheese and season with salt and pepper. Drizzle with olive oil and balsamic glaze and serve.
