A soft, buttery Italian cookie iced in pretty pastels. Super easy and perfect for serving at ANY celebration- Mother’s Day, baby showers, kids birthday parties or end-of-school celebrations.
Recipe:
1 cup/200g sugar
3/4 cup/170g butter softened
3 large eggs
1 teaspoon vanilla
1 teaspoon almond extract
3 ½ cups/420g all purpose flour
1 tablespoon baking powder
Pinch of salt
Icing:
¼ cup/ 56g cup milk
2 tablespoons butter, melted
½ teaspoon vanilla
½ teaspoon almond extract
2 ½cups /288g powdered sugar
food coloring and sprinkles (optional)
Preheat oven to 350°F/180°C.
In a mixing bowl combine butter and sugar and beat until well combined. Add in the eggs and extracts and beat again. Lastly, beat in the flour and baking powder. Scoop tablespoonfuls of the cookie batter into round balls onto a prepared baking sheet. Bake for 10 minutes.
Cool the cookies and dip in the icing. Top with sprinkles💕
