There should always be a bottle of these in your fridge. Nothing amps up salad, sandwiches even tacos, like some good picked onion . So easy to make, ready in 30 minutes and just so versatile. Use any onion you prefer or use the vinegar mixture to pickle any vegetables like cucumbers, carrots, cauliflower or beets.
Recipe:
One large red onion, thinly sliced (I use a mandoline)
3/4 cup white vinegar (distilled, apple cider or rice vinegar)
1/4 cup just-boiled water
1-2 tablespoons sugar (depending on how sweet you like your pickles. I use one )
1 teaspoon salt
1 teaspoon black or mixed peppercorns
Thin slivers of garlic (optional)
