Easy Mediterranean-Spiced Fish Dinner

A perfectly spiced fish with a colorful medley of vegetables- this sheet pan meal will have everyone asking for seconds and I promise it will be on repeat in your household too!
Recipe:
Fresh wild cod fillets (around 2.5lbs/1kg
2 cups cherry tomatoes
1 red pepper, cut to chunks
1 shallot, sliced
1/2 red onion, sliced
1 jalapeño pepper, cut to stripes without the seeds
1 lime, sliced to circles
Handful of fresh basil for decoration
olive oil to drizzle
Date syrup to drizzle
Juice from 1/2 lemon
Spice Mix Ingredients:
1 teaspoon JF Universal Salt or kosher salt
1/2 teaspoon of black pepper
1 teaspoon of paprika
1 teaspoon of coriander
1/2 teaspoon of cumin
1 teaspoon of sumac
Put all the spices in a bowl and mix them together.
Preheat the oven to 420F / 220C.
Place the cod fillets in the center of a baking pan with parchment paper.
Arrange all the vegetables around the fish. Spray vegetables lightly with olive oil season with salt and black pepper. Drizzle the fish with olive oil and date syrup. Sprinkle the spice mix on top of the fish and blend into the oil/syrup mixture with your hands. Drizzle the fish with lemon juice.
Bake it on 420F/210°C for 10 minutes. Then place under the broiler for 7-8 minutes until fish is golden brown. Enjoy!
