Old school comfort food for the whole family that comes together in under 30 minutes. A simple one-pot wonder filled with childhood nostalgia but made with healthy ingredients.

Recipe:

  • 2 tablespoons olive oil

  • 2-3 cloves garlic, minced

  • Pinch of red pepper flakes (optional)

  • 7 tablespoons tomato paste

  • ½ teaspoon onion powder

  • ¼ teaspoon black pepper

  • 1 tablespoon apple cider vinegar

  • ¼ teaspoon sugar

  • 4 cups of just boiled water

  • 1 tablespoon chicken ore vegetable bouillon paste (or 2 cubes)

  • 2 cups dry anellini pasta (or ditalini will work too)

  • 2 tablespoons unsalted butter

  • ⅓ cup freshly grated Parmesan or Pecorino Romano (or cheddar for authentic old-school style)

  • *Add tiny meatballs to the pasta if you want more protein.

Steps:

  1. Dissolve the bouillon paste in the water. Stir in the apple cider vinegar and sugar.

  2. Heat the olive oil in a large saucepan and sauté the tomato paste until slightly caramelized. Add the garlic and red pepper flakes and sauté for another minute.

  3. Add the water mixture to tomato paste and garlic .

  4. Add the pasta to the water and boil for 12 – 15 minutes, stirring frequently to prevent the pasta from sticking to the bottom of the pan..

  5. When the pasta is fully cooked, reduce the heat and stir in the butter and cheese. Check the pasta for seasoning and ladle into pasta bowls. Sprinkle with additional cheese
