These Chuck Roast Tacos went viral on the internet and I completely understand why! They are delicious and so easy to make, they are a must try for your next weeknight dinner.
Recipe:
Preheat the oven to 325°F/160°C
1 whole chuck roast (about 4-5lbs/2kgs
Kosher salt & freshly ground pepper
Taco Seasoning
1 Orange
1 Lime
Season the meat very generously and place in a casserole dish with a lid or cover with foil. Place in your oven for 4 hours.
Remove the roast from the oven, uncover and shred the meat with 2 forks. Season with taco seasoning and the juice of 1 orange & 1 lime. Turn the oven up to 425°F/220°C and return the meat, uncovered, for about 15 minutes. The edges will be nice and crispy.
Serve on corn tortillas with my salsa verde, pineapple salsa or pico de Gallo.
