A high protein, low carb breakfast that’s a cinch to put together but looks impressive. Let your air fryer do all the work or pop them into the oven if you don’t have one.

Recipe for 4 rings:

  • Bell Pepper , sliced into 1/2-inch thick slices

  • 1/2 cup/100g cottage cheese

  • 1 egg

  • 1 green onion, sliced

  • 2 tablespoons grated cheddar cheese

  • Salt and black pepper to taste

  • Optional add-ins:

  • Chopped, cooked bacon

  • Salami

  • Chopped tomatoes

  1. Place the rings in a parchment lined air fryer basket or on a baking sheet.

  2. Whisk the cottage cheese, egg, cheddar cheese, onions and seasoning together.

  3. Add spoonfuls of the mixture into the pepper rings.

  4. Air fry at 390°F for 10- 12 minutes, depending on how you like your eggs. Alternatively, bake at 350°F/ 180°C for about 20 minutes.
