A high protein, low carb breakfast that’s a cinch to put together but looks impressive. Let your air fryer do all the work or pop them into the oven if you don’t have one.
Recipe for 4 rings:
Bell Pepper , sliced into 1/2-inch thick slices
1/2 cup/100g cottage cheese
1 egg
1 green onion, sliced
2 tablespoons grated cheddar cheese
Salt and black pepper to taste
Optional add-ins:
Chopped, cooked bacon
Salami
Chopped tomatoes
Place the rings in a parchment lined air fryer basket or on a baking sheet.
Whisk the cottage cheese, egg, cheddar cheese, onions and seasoning together.
Add spoonfuls of the mixture into the pepper rings.
Air fry at 390°F for 10- 12 minutes, depending on how you like your eggs. Alternatively, bake at 350°F/ 180°C for about 20 minutes.
