Recipe:

  • 2 Sheets Puff Pastry, thawed

  • 1 Egg

  • 1 tsp Water

  • Fresh pestoCherry tomatoes ( the smallest you can find)

  • Fresh Mozzarella pearls small basil leavesKosher Salt to tasteBlack Pepper 

  • Balsamic glaze 

Steps:

  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper.

  2. Unfold and flatten the puff pasty, then cut into circles using a a cookie cutter or the edge of a round glass. Place on the baking sheet. Using a fork, prick the center area of the pastry.

  3. Place a dollop of pesto on the center of each pastry circle . 

  4. Place 5 tomatoes (halve them if not tiny) on top of the pesto. Season with salt and pepper. 

  5. Whisk the egg and water together and brush the edges of the tartlets with egg wash. Bake for 15-20 minutes, or until the pastry is puffy and golden brown. Immediately add a couple of the mozzarella pearls to the hot pastry. Allow to cool for a few minutes, then drizzle with the balsamic reduction, top with a basil leaf and serve.
