Easy 20 Minute Pasta Dinner
Five ingredients for the easiest weeknight dinner...
Monday dinner in 20 minutes or less. With just five ingredients, this version of the viral Boursin cheese pasta is my favorite one yet. The caramelized onion flavored cheese is essential, spicy heat is optional. Canned cherry tomatoes are a pantry staple for those nights when slicing or chopping is just out of the question. I use the Equii Rigatoni for extra protein or use any pasta shape you prefer.
Recipe:
1 14oz can cherry tomatoes (I use @muttipomodorousa )
1 @boursincheese cheese (caramelized onion flavor)
4 cloves minced garlic
1/4 cup chopped fresh basil
1 tablespoon olive oil
Salt, black and a pinch of red pepper flakes ( or JF Spicy Salt)
8oz @equii_foods Rigatoni or pasta of choice
1/4 cup pasta water
Parmesan cheese for sprinkling
Preheat the oven to 400°F/200°C.
Bring a pot of generously salted water to a boil.
In a baking dish, place the cheese, cherry tomatoes, garlic and basil. Season with your heart and drizzle with a little olive oil.
Bake the cheese and tomato mixture for about 20 minutes until the cheese is golden brown.
Meanwhile, cook the pasta until al dente’, according to the manufacturer’s instructions. Reserve a little of the pasta water.
Remove the tomato cheese mixture from the oven and stir until well combined. Add the pasta water for extra creaminess. Combine the pasta with the cheese mixture and sprinkle generously with freshly grated Parmesan cheese. Serve 🍝
