A hearty chicken Caesar salad that is more than just lettuce and grilled chicken. Air-fried crispy chicken tenders and crunchy roasted garbanzo beans on a bed of romaine lettuce and very finely sliced Brussels sprouts. Chop it all together and wrap it in your favorite wrap for the perfect handheld lunch or dinner…

Recipe:

Tenders:

  • 1 package of chicken tenders or 2 skinless, boneless chicken breasts cut into tenders.

  • Flour seasoned with salt and black pepper

  • 2 egg, beaten

  • Crushed cornflakes or Panko breadcrumbs.

  • Toss the tenders in the flour, then in the egg wash and then generously coat with the cornflake crumbs.

Air fry at 390°F for 5 – 6 minutes on each side.

Salad:

  • 3 cups sliced Romaine lettuce

  • 1 cup finely slice Brussels sprouts (use a mandoline if you have one)

  • 1/2 cup roasted garbanzo beans

  • Fresh Parmesan cheese, shaved

Dressing:

  • 2 cloves garlic

  • 1 ½ teaspoon anchovy paste (or Asian fish sauce)

  • 11/2 teaspoons Worcestershire sauce

  • ¼ cup grated parmesan cheese

  • 3 tablespoons lemon juice

  • 2 egg yolks (or 3 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • ½ cup oil (I use

  • 3 tablespoons mayonnaise

  • ½ teaspoon salt + ¼ teaspoon black pepper

Blend together in wide mouth mason jar with an immersion blender.

Use burrito-size wraps of your choice.
