The single greatest salty/sweet cookie you’ll ever make. Inspired by Smitten Kitchen’s version but taken to a whole new level using caramel popcorn. You could make your own popcorn but why? There are brilliant store bought options to make your life easier…
Recipe:
1/2 cup (115g) unsalted butter, softened
1/2 cup (95g) light brown sugar
1/3 cup (65g) granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1 and 1/4 cups of all purpose flour
1/2 teaspoon baking soda
1 x 8oz (225g) bag caramel popcorn
Flaky salt for sprinkling
Preheat oven to 350°F
In a small bowl whisk flour and baking soda together.
In a mixer, cream the butter, sugars, egg and vanilla together until smooth and creamy. Stir in the flour mixture until combined. Fold in the caramel popcorn.
Scoop heaped tablespoonfuls of batter, 2 inches apart, on a parchment-lined baking sheet. Bake for 10-12 minutes.
Immediately sprinkle with flaky salt and set aside to cool.
