I saw this on TikTok and knew I would never make banana bread any other way again.

Recipe:

For the banana loaf:

  • 1 cup mashed ripe banana (2-3 bananas)

  • 1 egg

  • ½ cup buttermilk (or 1/2 cup milk + 1 1/2 tsp vinegar)

  • 1 cup coconut oil, melted

  • 2 tsp vanilla extract

  • ¾ cup granulated sugar

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

    Instructions for the cake are on my Baklava Banana Cake Reel or my website.

    Caramel:

  • 1 cup granulated sugar

  • 1 cup hot water

    Melt the sugar and water in a pan over medium high heat until it reaches a temperature of 230°F/110°C.
    Pour over the cooled loaf and low the caramel to harden. Slice and serve.
