Beet Hummus Dip with Pistachio Dukkah

Recipe:
For the hummus:
2 small roasted beets
1 can cannellini or garbanzo beans, drained
2 tablespoons tahini
2 tablespoons olive oil
3 tablespoons lemon juice
1 garlic clove
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 or 2 ice cubes
Pistachio Dukkah:
2 tablespoons pistachios, roughly chopped
2 tablespoons store-bought Dukkah (I use one from Trader Joe’s)
Place all the ingredients for the hummus in a food processor and blitz until smooth. Add a little water if needed. Spoon into a serving bowl and drizzle with olive oil.
Toast the pistachios and roughly chop. Mix with the Dukkah and sprinkle around one edge of the dip. Serve with pita chips or your favorite dipping vegetables. Enjoy!
