Skip the overpriced Mother’s Day restaurant lunch and surprise her with this dead easy but gorgeous tart. Serve with a simple salad on the side and a glass of champagne. Dessert could be as easy as store bought meringues topped with whipped cream and berries .
And once again, you are the favorite child…😄
Recipe:
1 sheet store-bought puff pastry
Egg wash
Grated white cheddar or Gruyere cheese
1 bunch of thick stemmed asparagus, trimmed and blanched. ( place in boiling water for 2 minutes and then transfer to an ice bath)
A drizzle of olive oil
Parmesan cheese for sprinkling over the asparagus.
Place the puff pastry sheet on a parchment-lined baking sheet. Score a 1/2” border with a knife and prick the center with a fork.
Top the pastry with the grated cheddar or Gruyere cheese.
Place the asparagus on top of the cheese. Spray lightly with olive oil.
Sprinkle grated Parmesan over the asparagus and season with additional salt me black pepper.
Brush the border of the pastry with egg wash. Bake at 400°F/200°C for 20-25 minutes until golden brown.
Drizzle with balsamic glaze and serve.
