Beat the heat with this quick and delicious meal. The easiest way to eat the rainbow with a dressing so good you’ll add it to everything this summer…

Recipe:

  • 1 pound Ahi tuna fillets

  • 1 tablespoon avocado oil

  • 2 tablespoons Ponzu sauce

  • 1/2 – 1 cup Everything But The Bagel Seasoning

  • Dip tuna fillets into oil/ ponzu sauce mixture .

  • Coat generously with EBTB seasoning.

  • Sear tuna in a hot pan coated with sesame or avocado oil for 2 minutes per side. Remove tuna from pan and slice.


Salad:

  • 1 cup sliced peppers, preferably in assorted colors

  • 2 cups cucumber , spiralized or shaved with a vegetable peeler

  • 2 avocados, cubed

  • 1/3 of a red onion, thinly sliced. Place onion in the salad dressing while cooking the tuna, to pickle slightly

  • Pickled ginger to taste, chopped


Ponzu Dressing:

  • 3 tablespoons Ponzu sauce

  • 1 tablespoon Tamari or soy sauce

  • 2 tablespoons rice vinegar

  • 2 teaspoons minced ginger

  • 1/2 teaspoon mustard powder

  • 2 tablespoons honey

  • 1/4 cup sesame oil

  • Salt & pepper to taste

Optional: wonton strips (can replace pickled onions if you prefer)
