Whipped Ricotta Dip with Figs, Marcona Almonds & Honey
A 5-minute appetizer that will have your guests swooning. A cloud of silky whipped ricotta topped with dried figs, Marcona almonds and a drizzle of honey. Serve on toasted slices of baguette for an easy appetizer or some sliced vegetables for a healthy snack.
Recipe:
1 cup (200g) ricotta cheese (whole milk)
1 tablespoon olive oil
1/2 teaspoon fine sea salt
Black pepper to taste
2 teaspoon fresh thyme leaves
2-3 dried figs, sliced
2 tablespoons Marcona almonds
1 tablespoon honey
Place the ricotta cheese, olive oil and salt in a food processor (or use a handheld mixer). Process until smooth and fluffy. Stir in the black pepper.
Pour the cheese mixture into a serving bowl and top with figs, almonds and thyme leaves. Drizzle with honey and serve.
