Healthy, hearty, and packed with flavor! Sweet potato beef bowls with cottage cheese, avocado , broccoli rice and topped with hot honey — your new favorite meal. Who’s trying this viral recipe?
Recipe:
1 large sweet potato, cubed
Salt and black pepper to taste
1 pound/500g ground beef (or turkey)
Olive oil for cooking the beef and roasting the sweet potato
1 tablespoon taco seasoning
1 small head of broccoli, steamed and “riced” in a food processor
1 cup of cottage cheese
1 avocado, sliced
Hot honey for drizzling
Optional: sliced pickled jalapeño
Toss the sweet potato in olive oil, season to taste and roast at 400°F/200°C for 20 minutes.
Sauté the ground meat sprinkled with taco seasoning over medium high heat until cooked through .
Place the sweet potatoes, cooked meat, broccoli, cottage cheese and avocado in a bowl. Season with salt and ground pepper . Drizzle with hot honey and enjoy.
