Beets are the jewels of summer produce—shining bright alongside red onion, pomegranate arils, mint and a golden orange honey mustard dressing. A salad as stunning as it is satisfying.
3- 4 medium size beets, peeled, roasted and diced
1/2 a large red onion, finely diced
Pomegranate arils
Fresh mint, chopped
Dressing:
3 tablespoons champagne or white wine vinegar
3 tablespoons olive oil,
1 heaped tablespoon grainy mustard
The juice and zest of half an an orange
1 teaspoon prepared white horseradish (optional)
2 teaspoons honey
Salt and black pepper to taste
