Shrimp & lemon are a match made in heaven. Throw some pasta in with that and you’ve got a perfect dinner adorned by all. This one pan wonder will be on your dinner table in a matter of minutes…

Recipe:

  • 2 tablespoons olive oil

  • 1 tablespoon unsalted butter

  • 1/3 onions or 2 shallots, chopped

  • 1 lemon, sliced and 1 lemon juiced

  • 1 pound peeled and uncooked shrimp

  • 2 fat garlic cloves, minced

  • JF spicy salt and black pepper (or kosher salt and red pepper flakes)

  • 4 1/2 cups chicken broth

  • 1 pound spaghetti or angel hair pasta (gluten free works too)

  • 2 tablespoons chopped Italien parsley

  • 2 tablespoons butter

  1. Place the onion and lemon slices in a large skillet with healers olive oil and butter

  2. Cook until onion is soft but not brown

  3. Add the shrimp and season well

  4. Sauté for 2 minutes

  5. Stir in the garlic and cook for one minute more

  6. Remove the shrimp mixture from the pan

  7. Pour the chicken broth and 1/4 cup lemon juice into the skillet and bring to a boil

  8. Add pasta and cook for 1 minute less than the instructions on the box. The broth will have cooked down to about 1/4 cup

  9. Add the shrimp mixture back into the pan with the pasta

  10. Stir in butter and parsley until the pasta is well coated, creamy, and hot

P.S. Cooking the pasta in broth and lemon juice is the tip to an extra lemony flavor
