Celebrate apricot season with this simply divine summer dessert. Not all apricots taste as good as they look but a quick roast in honey and orange juice enhances the flavor to another level. Serve with Greek yoghurt – honey flavored is highly recommended. Leftovers for breakfast with some granola are a must…

Recipe:

  • 400g fresh apricots , about 12, halved & pits removed

  • 3 tablespoons honey

  • Zest and juice of one orange

  • Fresh thyme

    To serve:
    Toasted flakes almonds
    Greek yogurt (honey flavored if possible)

To Serve:

  • Preheat oven to 400°F/200°C.

  • Cut apricot halves into thick wedges and place snugly in a roasting pan.

  • Toss with orange juice and zest and drizzle with honey. Top with a few sprigs of thyme.

  • Roast for 15 -20 minutes (fruit should be soft but not mushy).

  • Serve apricots spooned over bowls of Greek yogurt and sprinkled with almonds.
