Nobody wants to cook in a heatwave. But everyone still wants to eat well, so here's how I'm getting through it: an air fryer instead of an oven, one skillet instead of four pans, a salad I've now made three days running. Five dinners that keep the kitchen cool and still taste like summer at its best.

The viral TJ’s lobster pasta has been all over TikTok, but I had to make it better. My twist? Juicy cherry tomatoes and sweet summer corn for extra freshness and flavor. It’s the ultimate easy weeknight dinner — and it tastes like something you’d order at a coastal restaurant.

Why This Recipe Works

    •    Trader Joe’s shortcuts: frozen langostino tails or Argentinian shrimp make it simple.

    •    Fresh summer add-ins: cherry tomatoes + corn brighten up the creamy seafood pasta.

    •    30-minute dinner: fast enough for weeknights but fancy enough for guests.

Ingredients

    •    1 tbsp olive oil

    •    450 g (16 oz) farfalle (bow-tie pasta) or pasta of your choice, cooked al dente

    •    1 small onion, diced

    •    2 garlic cloves, minced

    •    340 g (12 oz) Trader Joe’s frozen langostino tails, thawed or 450 g (16 oz) Argentinian shrimp, peeled & cut into small pieces

    •    1 pint cherry tomatoes, halved

    •    1 cup fresh corn kernels

    •    Salt + freshly ground black pepper

    •    Pinch of red pepper flakes (or Jennifer Fisher Spicy Salt, if you have it)

    •    Chopped Italian parsley or basil, for garnish

Method

    1.    Cook pasta: Boil farfalle until al dente, drain, and set aside. Reserve ½ cup of pasta water.

    2.    Sauté aromatics: Heat olive oil in a large skillet. Add onion and cook until softened, then stir in garlic.

    3.    Cook seafood: Add langostino tails or shrimp to the skillet. Season with salt, pepper, and a pinch of red pepper flakes. Cook until just opaque.

    4.    Add veggies: Stir in cherry tomatoes and corn. Cook until tomatoes soften and release their juices.

    5.    Toss with pasta: Add the cooked pasta and a splash of reserved pasta water to help the sauce cling. Adjust seasoning.

    6.    Serve: Garnish with chopped parsley or basil and serve warm.

Tips

    •    Customize: Add a splash of cream or white wine for a richer sauce.

    •    Make it spicy: Use chili crisp or double the red pepper flakes.

    •    Short on time? Use pre-cooked shrimp and just toss them in at the end.

Everything you love about taco night, in one pan. The rice cooks right in the broth with the meat and seasoning, so it comes out saucy and savory without a single extra dish. Set out the toppings and let everyone build their own bowl.

Recipe:

2 tablespoon olive oil

1/2 onion, finely diced

1 pound ground beef, chicken , turkey or vegetarian crumbles

1/3 cup uncooked long grain rice (minute-rice if you really want to make this quick)

3 tablespoons tomato paste

11/2 cups broth - chicken or vegetable

2 tablespoons taco seasoning (I used @sietefoods !)

1/2 cup shredded Mexican-blend cheese (optional)

Chopped cilantro

Heat the oil in a skillet and cook the onion until softened. Add the ground meat, breaking it up with a spoon and cook until browned. (10-12 minutes). Drain excess fat if necessary. Stir in the tomato paste and broth. Add the rice and taco seasoning. Cover and cook the mixture according to the rice instructions.

Uncover and stir in the cheese.

Serve with shredded lettuce, tomato salsa, avocado, shredded Mexican blend cheese and limes.




BBQ Chopped Chicken Salad

Made by request, this is a copycat version of the popular Wood Ranch salad.

Made by request, this is a copycat version of the popular Wood Ranch salad. Truthfully I was skeptical only to end up making it 3 days in a row. Delicious, easy and one of the few times I’m ok with using store-bought dressing. Summer might be almost over but salad season never is…

Recipe:

Iceberg or romaine lettuce chopped
Cherry tomatoes, halved,
Corn, fresh or frozen (thawed)
Black beans
Cooked chicken, cubed
Scallions, sliced
Monterey Jack cheese, shredded
Cilantro, chopped
Tortilla strips or Fritos corn chips
Ranch dressing
BBQ sauce


Optional add-ons:
Avocado, cubed
Carrots, diced




Air Fryer Salmon with Pineapple

Recipe:

For the Salmon:

4 fillets of @sena_seafood Copper River Salmon

2 tablespoons olive oil

2 teaspoons smoked paprika

2 teaspoons chili powder

1 teaspoon JF Salt

1 tablespoon dried oregano

Air fry the salmon at 390°F/200°C for 8 -10 minutes.



Salsa:

1 mango, diced

1 cup fresh pineapple , diced

1/2 red bell pepper, finely chopped

1/2 green bell pepper, finely chopped

1 jalapeño, finely diced

1/4 cup chopped cilantro

2 tablespoons chopped chives

Juice of one lime

VIRAL SHEET PAN CHICKEN DÖNER KEBABS

But I took a shortcut: shawarma spice.

All the flavor, none of the fuss.

A new easy weeknight dinner that taste like your favorite street food.

Recipe:
For the meat:
1 lb/ 500g ground chicken (or beef)
1 tablespoon store bought shawarma spice
2 cloves garlic, minced
1 tablespoon tomato paste
1 tablespoon Greek yogurt
A squeeze of lemon juice

Add to the sheet pan and bake with the kebabs:
4 tomatoes, cut into wedges
1 or 2 jalapeño peppers
1 onion cut into wedges.
Sprinkle with olive oil, salt and black pepper.

Place a large dollop of the chicken mixture between 2 sheets of parchment paper and roll out flat with a rolling pin. Roll up and place on a sheet pan. Continue making parchment roll ups of the meat mixture until it’s all used . Mine made 4.
Add the tomatoes , jalapeños and onion to the pan, sprinkle with olive oil and season.

Bake at 400°F/200°C for 25 minutes.

Unroll the kebabs and tear or slice the meat.
Assemble on a toasted pita or lavash bread.
I use shallot & yogurt to spread on the lavash and top the Doner kebab with homemade Ezme dip.
