A hearty lentil salad that pairs well chicken or salmon but can easily stand alone as a meal. The best of all, no cooking is required. Ready-cooked lentils and beets are widely available these days so beautiful salads require little more than opening a package. The vibrant dressing comes together in a minute so don’t be tempted by the bottled stuff…

Recipe:

  • 1-lb package of ready-steamed lentils (or use canned lentils, drained)

  • 3 ready-cooked beets, diced

  • 1 cup diced strawberries

  • 1 tube Honey Chèvre ( I use Trader Joe’s)

  • 1/4 cup chopped fresh mint
