One of my most requested recipes and summer staples. Use this marinade on any form of chicken you love to grill - even a whole flattened chicken - or it is equally delicious on salmon or shrimp.
Adjust the heat according to your taste..
Ingredients:
11/2 pounds chicken breasts or chicken thighs, cut into 11/2” pieces
1/2 cup brown sugar
1/2 cup rice vinegar
2 tablespoons chile garlic sauce (such as sambal oelek)
1/4 cup fish sauce
1-2 tablespoons Sriracha Sauce
2 teaspoons ginger paste or finely chopped ginger
Honey for drizzling
8 wooden skewers soaked in water for an hour
Thread the chicken onto the skewers and marinade for at least an hour.
Preheat a grill to medium high heat.
Remove skewers from the marinade with and pour the marinade into a small saucepan. Bring to a boil and simmer for 10 minutes until reduced by half.
Meanwhile grill the skewers, basting frequently until cooked through, about 8 - 10 minutes.
