A variety of heirloom and cherry tomatoes and fresh-picked ears of corn. So many recipes come to mind but this simple and stunning salad will be on repeat for the rest of summer…

Heirloom tomatoes in a variety of colors, sliced
Cherry tomatoes, halved only if they are large
Fresh corn
Arugula/rocket

Dressing:
1 small shallot finely diced
1 teaspoon Dijon mustard
A pinch of sugar
1 tablespoon red wine vinegar
3 tablespoons olive oil
Salt & pepper
