Don’t knock this till you try it. Yes, cottage cheese has made a huge comeback and this viral ice cream is the best idea of all. I use whipped cottage cheese for the smoothest, creamiest “ice cream”, pour it onto a salty rice cake and drench it in melted chocolate. My favorite flavor combination in my new favorite frozen treat.

Recipe:

  • 1 cup cottage cheese (whipped or regular)

  • 1/3 cup peanut butter

  • 2-3 tablespoons maple syrup

  • 4 rice cakes

  • 1 cup chocolate chips, melted

  • 1 teaspoon coconut oil

  • Flaky sea salt for sprinkling

Steps:

  1. Using a high-speed blender, blend the cottage cheese, peanut butter and maple syrup until very smooth.

  2. Pour the ice cream onto each rice and place in the freezer. Freeze until firm.

  3. Whisk the melted chocolate and coconut oil together and pour chocolate over each ice cream bar. Sprinkle with sea salt and freeze again until serving.

  4. PS – for a thicker sandwich, freeze the ice cream until firm but spoonable and then spread a thick layer onto the rice cake.
