The most scrumptious chicken meatballs by @daleyplate while I wait patiently for the delivery of her new cookbook South of Somewhere. Congratulations Dale, I can’t wait to cook every recipe!

Recipe:
1 pound ground chicken
1 clove garlic, finely minced
1/4 cup finely chopped green onion (white and green parts - about 2 stalks)
1/4 cup finely chopped fresh parsley
2 tablespoons freshly chopped chives
2 cups chopped fresh spinach
Zest of 1 medium lemon
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/2 teaspoon smoked paprika
1/2 cup crumbled feta cheese
1 medium egg

Yogurt Sauce:

1/2 cup plain Greek yogurt (Or sour cream)
4 tablespoons avocado oil mayonnaise
2 teaspoons garlic power
1/2 teaspoon salt
1 pinch cayenne pepper
zest and juice of 1 medium lemon
1 tablespoon freshly chopped dill
1 tablespoon freshly chopped chives

Mix all the ingredients for the meatballs together and form balls with an ice cream scoop. Fry the meatballs in olive oil browning on all sides. Finish in a 350°F/180°C oven for 10 minutes.

Serve with yogurt sauce on a plate with olives, sliced peppers, sliced cucumbers and cherry tomatoes.
