I put it in a soufflé. And yes, it actually worked.

Light, airy, and secretly packed with protein—this might be my new favorite way to use it.

Recipe:
(Serves 2-3)

* 1 cup cottage cheese
* 2 eggs (separated)
* 2 tbsp grated cheese (Parmesan or Gruyère if you want it richer, or Mexican Blend because that’s all I had).
* 1 tbsp flour (optional but helps structure)
* Salt + pepper
* Optional: herbs, spinach, or sautéed shallots

How to make it

1. Blend the cottage cheese until completely smooth (this is non-negotiable).
2. Mix in egg yolks, cheese, seasoning, and flour.
3. In a separate bowl, whip egg whites to soft peaks.
4. Gently fold whites into the base- don’t overmix or you’ll kill the lift.
5. Pour into greased ramekins.
6. Bake at 375°F (190°C) for ~20–25 min until puffed and golden.
