CHAROSET ALMOND FLOUR CAKE

Proof that leftovers can be better than the original.

This almond flour loaf is moist, spiced, and completely Passover-friendly and is even better the next day.

We don’t waste anything around here 👏

Recipe:
2 cups almond flour
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
3 eggs
½ cup sugar
¼ cup olive oil (or neutral oil)
1 tsp vanilla
1–1¼ cups charoset ( whichever version your family loves)

Directions:
Preheat oven to 350°F. Line a loaf pan with parchment.

In one bowl, whisk almond flour, baking soda, cinnamon, and salt.
In another, whisk eggs, sugar, oil and vanilla until smooth.

Fold dry into wet, then gently fold in charoset (+ nuts if using).

Pour into a prepared pan and bake 50 minutes, until set and golden.
Cool completely before slicing.



Optional glaze:
Powdered sugar + splash of water or lemon juice + drizzle of honey
