Score big on game day with these irresistible Buffalo Chicken Taco Bites! Elevate your snacking game and kick off the festivities with this crowd-pleaser. Get ready for a flavor touchdown!
Recipe:
Corn tortillas
2 cups shredded, cooked chicken
1/3 cup cream cheese
1/2 cup buffalo hot sauce ( I use Frank’s)
1 cup Mexican-blend cheese
Chopped chives
Using a 3” cookie cutter, cut rounds from the corn tortillas. Spray rounds lightly with olive oil. Place them on an upside down muffin tin (shown in video) and bake for 10 minutes at 350°F.
To make filling:
Melt the cream cheese over medium heat in a large skillet. Add the hot sauce and stir to combine. Fold the shredded chicken into the cream cheese mixture, then add the cheese and chives. Stir until the cheese is melted. Fill the mini taco shelled with the chicken mixture and serve with guacamole.
Mini tacos can made and filled ahead of time, reheated and then served warm.
