@bromabakery’s perfect pumpkin loaf… but make it chocolate pumpkin marble.
Swirls of rich cocoa and spiced pumpkin — the perfect fall bread!
Recipe:
11/2 cups all-purpose flour
11/4 cups sugar
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon cloves
1/4 teaspoon allspice
1 cup pumpkin puree
1/2 cup canola (or vegetable) oil
1/3 cup milk
2 eggs
1 teaspoon vanilla paste
For the chocolate batter:
1/4 cup cocoa powder, sifted
1/4 cup hot water
Whisk this mixture until smooth and add to 1/3 of the cake batter.
Whisk the dry ingredients in a bowl. Add the pumpkin, eggs, milk, oil and vanilla paste and whisk until well combined.
Spoon 1/3 of the batter into a separate bowl and add the chocolate mixture.
Pour the pumpkin mixture into a prepared loaf pan. Top with spoonfuls of the chocolate mixture. Swirling with a skewer is optional- I did not.
Bake the bread in a loaf pan at 350°F/180°C for 50 minutes. (Tent with foil after 30 minutes if the cake starts to brown too much)
