Kickstart you day with this power breakfast. A veggie loaded open omelette with a great way to serve up greens to the kale haters in your family….
Recipe:
2-3 eggs
A handful of kale or spinach leaves
Salt and freshly ground black pepper
Olive oil
1 Yukon Gold potato, diced
1/4 cup Cherry tomatoes, halved
1 zucchini, diced
Feta cheese
Arugula
Blend the the eggs and greens in a blender. Season to taste
Spray a pan with olive oil and sauté the potatoes on medium high heat for a few minutes. Add the tomatoes and zucchini and cook for another minute. Add 1/2 cup of water to the pan and cook until the water evaporates. Season the vegetables to taste. Set aside.
Spray a 9” nonstick skillet with olive oil and heat. Pour in the eggs swirling the pan to evenly coat it in the egg mixture .
When the underside of the omelette is firm, carefully lift with a large spatula and flip. Cook for a minute and slide the omelette onto a plate. Top with the vegetables, feta cheese and arugula. Season to taste and serve immediately
